Ingredients

Instructions
Cut bacon into small pieces and cook until crispy. Drain and reserve oil
Separate the yolks of two eggs
In a large bowl whisk together egg yolks, grated parmesan, bacon oil, and black pepper
Place frozen udon in hot water and allow to defrost
Once udon is hot and chewy, add to the egg yolk mixture slowly. Be sure not to add all of the udon at once since this may cause the eggs to cook
Mix together and add about ¼ cup of the udon water to the bowl
Top with bacon and extra parmesan cheese
