All you need are
- Frozen udon: I found this in the frozen section of my local Asian market. These packs come in handy since they only take about a minute in hot water to defrost but are so chewy and fresh. I always keep some in my freezer for last minute meals
- Bacon
- Egg yolks
- Feel free to add more seasonings to taste, I usually like to add a bit of black pepper

Ingredients
- 3-4 strips bacon
- 2 egg yolks
- 1 cup grated parmesan
- 1 serving frozen udon
- ½ tsp black pepper to taste
Instructions
- Cut bacon into small pieces and cook until crispy. Drain and reserve oil
- Separate the yolks of two eggs
- In a large bowl whisk together egg yolks, grated parmesan, bacon oil, and black pepper
- Place frozen udon in hot water and allow to defrost
- Once udon is hot and chewy, add to the egg yolk mixture slowly. Be sure not to add all of the udon at once since this may cause the eggs to cook
- Mix together and add about ¼ cup of the udon water to the bowl
- Top with bacon and extra parmesan cheese
